Wirra Wirra The Holy Thirst Cabernet Shiraz is essentially a blend of the most outstanding parcels of Wirra Wirra's The Angelus Cabernet Sauvignon and RSW Shiraz.

Each parcel is vinified and matured separately. During fermentation, they are tasted twice daily to determine the required level of hand plunging and maceration on skins.

The parcels are basket pressed and settled briefly in tanks, then are transferred to a selection of French oak barrels. After malolactic fermentation, and several times throughout maturation, they are racked and returned to barrel.

The best parcels are blended, then the wine is filtered in a single pass before bottling.

Dense ruby red, Wirra Wirra The Holy Thirst Cabernet Shiraz has enduring dark berry flavours, bright acidity and precise tannins. Cellaring potential is 25 years.
